Cinco de Mayo Treat – Lime Jello Wedges

One delicious party treat is jello. We enjoy jello year round, but parties are another reason to have even more! Since Cinco de Mayo is a large celebration, we definitely need to make a lot to share!

However, Cinco de Mayo is not just any celebration– it’s a holiday! That means we got to amp it up. We recently came across a quick and easy lime jello wedge idea, and are inspired to make some for Cinco de Mayo. Keep reading for instructions!

Ingredients & Supplies:

  • Limes
  • Lime jello mix (or any flavor)
  • grapefruit spoon
  • Juicer/Hand held juice press
  • Hot water
  • Cupcake/muffin tin

Prepare the jello mix according to the instructions on the box. Wash the limes and cut it in half lengthwise. Using a juicer or juice press, remove the juice from the limes, and then carefully remove the lime “meat” by using a grapefruit spoon, leaving just the rind.

Lay the empty rind halves in the cupcake/muffin tin, and carefully pour the jello mixture into the rind. Put in the refrigerator for the jello to set. Once set, remove the limes from the refrigerator. To cut the limes into wedges, carefully slice with a wet, sharp knife.

To add an extra zing to the wedges, sprinkle the top with a little bit of sugar and salt, or even a dollop of whipped cream! This treat is great to serve during spring and summer parties, such as Cinco de Mayo. Try it with other flavors of jello or fruit–the possibilities are endless.
