Pumpkin Series: Creamy Pumpkin Soup

I don’t know about you, but in the Fall months, I like to curl up with a bowl of my favorite soup and delve into a good book. As much as I enjoy the traditional chicken noodle, sometimes I just want something creamier. This is where a pumpkin soup recipe from Allrecipes would come in handy. This recipe makes 7-10 servings, so get a Halloween  party going and enjoy this festive creamy soup!


  • 6 cups chicken stock
  • 1 1/2 teaspoons salt
  • 4 cups pumpkin puree
  • 1 teaspoon chopped fresh parsley
  • 1 cup chopped onion
  • 1/2 teaspoon chopped fresh thyme
  • 1 clove garlic, minced
  • 1/2 cup heavy whipping cream
  • 5 whole black peppercorns

Heat up the stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil and then reduce the mixture into a low simmer for 30 minutes uncovered.

With a food processor or blender, puree single serving portions of the mixture at a time until all is pureed.

Return the mixture back into the pot and bring to a boil. Then reduce back into a low simmer for another 30 minutes, uncovered. Stir in the heavy whipping cream.

Pour into soup bowls and serve! Garnish the top with some fresh parsley for additional embellishment!
