Since we don’t want you to have to worry about baking three dozen cupcakes the day before the big family Christmas dinner, you can bake the cupcakes a week in advance and freeze them. However, do not decorate them until the night before. You have your children or friends help you with this as a fun Christmas Eve activity! After you are done with making these cupcakes, you can use them as Christmas decorations and accents, as well. Remember that most of these cupcakes are Vanilla or Chocolate cupcakes, iced with Swiss Meringue Buttercream, which is perfect for spreading thin layers or sculpting into thick mounts of icing– whichever you prefer.
